Gentian is used in Abruzzi for digestive liquors based on white wine and alcohol, each family with their own recipe. After a first hesitant sip to get familiar with its bitterness, most people get addicted to it. Here we mimic the pungent and sharp bitterness typical of this liquor balancing it with the yeast and malts flavor.
